Either set up will give you a ton of utility, access to the boons you need, and self healing/shielding. I highly recommend either warriormonk/runemage/shaman or warriormonk/runemage/wildhunter for this kind of build. My girlfriend plays with me and she has built a paladin character. It will give you a gap closer, more health, rage boon and most importantly access to extreme bleed/pain which will make bossing much easier due to how long bleed lasts. Wild hunter is a good choice if you are using a 1hander due to how hard it can be to stay on top of things with so little range. Shaman will make elemental weapons hit harder and faster, rogue gives you unencumbered dodges but you would literally be taking it just for the breakthrough. As for the third class you have a few options. It also gives you more stamina, some damage reduction and you will need to sleep less. Next up I recommend the warrior monk for obvious reasons, you will get discipline boon like mad, and counters are OP. With rune mage and these buffs mana should not be an issue even if you only take the first tier of mana. Gold lich mask by itself will give you 30% mana reduction + wine is another 20% + mage tent is another 20%, so with only wearing a mana reduction helmet you have a whopping 70% reduction there. not too shabby if your low on mana and are not wearing much mana reduction. Its breakthrough gives you another 40 mana as well. There are very few builds that would not benefit from rune mage. It will also give you a huge amount of utility and if you are lightning focused a ranged spell option. Rune mage with internalized lexicon will allow you to use SnS and will also give you a self buff that increases damage resists and can be shattered for a healing effect.
